Portuguese Rice Pudding

This is a really low maintenance recipe for anyone who is a fan of rice pudding!

Ingredients
  

  • 1/2 cup washed rice (rice pudding rice or any of your choice)
  • 1 tbsp butter
  • 1 1/4 cup water
  • 500 ml creamy coconut milk (you can also use any other milk of your choice)
  • lemon skin (thumb sized)
  • 1 cup sugar
  • ground cinnamon (to sprinkle with)

Equipment

  • 2 saucepans

Method
 

  1. In one pan, boil water and add butter and rice 
  2. Cook rice until fluffy 
  3. In a second pan, heat coconut milk with lemon skin 
  4. Wait until rice is cooked and coconut milk is completely heated
  5. Gradually add coconut milk to the rice  and then stir together 
  6. Add the sugar and continue stirring and then bring to a boil 
  7. Once boiled, add to a serving dish and sprinkle cinnamon on top 
  8. Let it cool down for about 15-20 minutes and enjoy 🍚 🎄

Notes

For this recipe, it is important to keep stirring rice pudding after adding the milk to avoid it from getting stuck at the bottom of the saucepan.
