Apple Pie Overnight Oats

An easy and filling breakfast recipe to kickstart your day

Ingredients
  

Overnight Oats Base

  • 1 cup rolled oats  (I used gluten free oats for this recipe)
  • 1/2 tsp ground cinnamon
  • Pinch of ground ginger
  • 1/2 cup plant based milk 
  • 2 tbsp greek yoghurt 
  • 2 tbsp maple syrup 

Apple Topping

  • 1 apple (cut into small cubes)
  • 1 tbsp maple syrup 
  • 1 tsp ground cinnamon 
  • 1/4 tsp nutmeg 
  • Pinch of salt 

Instructions
 

  • Add all overnight oats base ingredients in a bowl and mix well 
  • On medium heat, add apples, maple syrup, cinnamon, nutmeg and salt and sauté until apples start to soften 
  • Remove apple topping from heat and let them cool for about 5 minutes
  • Add half of apples into oats and mix, top oats with the other half
  • Store in fridge overnight and enjoy 🍂
