Apple Pie Overnight Oats

Overnight Oats Base
- 1 cup rolled oats (I used gluten free oats for this recipe)
- 1/2 tsp ground cinnamon
- Pinch of ground ginger
- 1/2 cup plant based milk
- 2 tbsp greek yoghurt
- 2 tbsp maple syrup
Apple Topping
- 1 apple (cut into small cubes)
- 1 tbsp maple syrup
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
Add all overnight oats base ingredients in a bowl and mix well
On medium heat, add apples, maple syrup, cinnamon, nutmeg and salt and sauté until apples start to soften
Remove apple topping from heat and let them cool for about 5 minutes
Add half of apples into oats and mix, top oats with the other half
Store in fridge overnight and enjoy 🍂
