Apple Cinnamon Bread

One of the best ingredient combinations for the winter time

Ingredients
  

Bread

  • 2 medium eggs at room temperature 
  • 1/2 cup granulated sugar 
  • 1/2 cup melted butter 
  • 1 tsp vanilla extract 
  • 1 1/2 cups plain flour 
  • 1 tsp baking powder
  • 1/2 tsp baking soda 
  • 1/2 tsp salt 
  • 1 1/2 peeled and chopped apples 

Topping

  • 1 tbsp light brown sugar  
  • 1/2 tsp ground cinnamon mixed together

Glaze

  • 1/2 cup icing sugar
  • 1/4 tsp ground cinnamon 
  • 1 tbsp water 

Instructions
 

Glaze

  • Combine icing sugar, cinnamon and water until smooth consistency 
  • Put in the fridge 

Bread

  • Preheat the oven at 230c 
  • Whisk eggs and sugar together in a mixing bowl 
  • Whisk in the butter and vanilla extract 
  • Stir in flour, baking powder, baking soda and salt until all is well combined and the batter is thick 
  • Fold in the apples 
  • Pour half of the batter in the loaf pan and sprinkle the sugar and cinnamon topping
  • Pour the remaining batter, do the same and then use a spoon or knife to swirl the top layer 
  • Bake first for 35 minutes and if starts to brown quickly cover with foil and bake for another 20 minutes or until completely baked 
  • Once baked, let it cool down for 20 minutes before adding the glaze
  • Enjoy :) 

Notes

For the bread, I would recommend this to bake for 35 minutes at first and then keep checking with a toothpick until the inside is completely baked.
If the top browns too quickly, cover it with tin foil to avoid it from burning.
