For this festive season, I decided to prepare one of my favourite desserts from my childhood—Portuguese Rice Pudding. If you are a fan of rice pudding or enjoy Portuguese desserts, this is definitely worth trying.
This is a recipe that has been a part of my life and one that I have personalised and made my own. The best part of this dish is its simplicity and in under an hour, you can make a delightful creamy and tasty treat with just a handful of ingredients.
I always choose rich and creamy coconut milk from a can for this recipe. However, if you have a preference for a different type of milk, feel free to try with your favourite instead. I also find that rice pudding rice is typically a good choice, but this time, I decided to use long-grain rice and it also worked.

Equipment
- 2 saucepans
Ingredients
- 1/2 cup washed rice (rice pudding rice or any of your choice)
- 1 tbsp butter
- 1 1/4 cup water
- 500 ml creamy coconut milk (you can also use any other milk of your choice)
- lemon skin (thumb sized)
- 1 cup sugar
- ground cinnamon (to sprinkle with)
Instructions
- In one pan, boil water and add butter and rice
- Cook rice until fluffy
- In a second pan, heat coconut milk with lemon skin
- Wait until rice is cooked and coconut milk is completely heated
- Gradually add coconut milk to the rice and then stir together
- Add the sugar and continue stirring and then bring to a boil
- Once boiled, add to a serving dish and sprinkle cinnamon on top
- Let it cool down for about 15-20 minutes and enjoy 🍚 🎄
