Apple Cinnamon Bread

Bread
- 2 medium eggs at room temperatureÂ
- 1/2 cup granulated sugarÂ
- 1/2 cup melted butterÂ
- 1 tsp vanilla extractÂ
- 1 1/2 cups plain flourÂ
- 1 tsp baking powder
- 1/2 tsp baking sodaÂ
- 1/2 tsp saltÂ
- 1 1/2 peeled and chopped applesÂ
Topping
- 1 tbsp light brown sugar Â
- 1/2 tsp ground cinnamon mixed together
Glaze
- 1/2 cup icing sugar
- 1/4 tsp ground cinnamonÂ
- 1 tbsp waterÂ

- Combine icing sugar, cinnamon and water until smooth consistencyÂ
- Put in the fridgeÂ
Bread
- Preheat the oven at 230cÂ
- Whisk eggs and sugar together in a mixing bowlÂ
- Whisk in the butter and vanilla extractÂ
- Stir in flour, baking powder, baking soda and salt until all is well combined and the batter is thickÂ
- Fold in the applesÂ
- Pour half of the batter in the loaf pan and sprinkle the sugar and cinnamon topping
- Pour the remaining batter, do the same and then use a spoon or knife to swirl the top layerÂ
- Bake first for 35 minutes and if starts to brown quickly cover with foil and bake for another 20 minutes or until completely bakedÂ
- Once baked, let it cool down for 20 minutes before adding the glaze

Notes
For the bread, I would recommend this to bake for 35 minutes at first and then keep checking with a toothpick until the inside is completely baked.
If the top browns too quickly, cover it with tin foil to avoid it from burning.
