Jerk Enoki Mushrooms with Rice & Peas & Baked Plantain

This jerk enoki mushroom dish is a fantastic plant-based alternative to a jerk chicken meal and is served alongside rice & peas and baked plantain. Adding avocado and kale also creates a well-balanced blend of greens, healthy fats, protein, and grains.

Inspired by Caribbean flavours, I discovered jerk enoki mushrooms on Rachel Ama’s YouTube channel and when cooked, these mushrooms provide a chicken-like texture illusion which prompted me to recreate the dish.

I also chose to bake the plantain as this preserves its natural nutrients such as vitamins and minerals which does not happen when frying at high temperatures.

I encourage you to try this recipe, especially if you are a mushroom fan or want to just add something else to your plant-based diet!

Notes

  • If you can’t find any enoki mushrooms, you could replace it with shiitake mushrooms.
  • When making the jerk seasoning mixture, you can always check whether it is too spicy for you or not. If it is, you can always add a bit more of maple syrup.
